Tourism and food are related in different ways. Among them, Food Tourism stands out for valuing the local food heritage, generating enriching experiences for tourists and functioning as a vector of local and regional economic development. This article addresses Food Tourism in its fundamental aspects, dealing with its concept, sub-segments, characteristics, main attractions and challenges associated with its sustainable development. It also presents basic concepts to understand food as a cultural practice. The aim is to provide the reader with general and introductory knowledge about Food Tourism from the perspective of national and international authors who are a reference in research on the subject.
